There was a convergence from on one side 5 bit baudot codes used by teleprinters and much longer words used in mathematics. https://en.wikipedia.org/wiki/Baudot_code Commercial computers needed to be able to print and the 7-8 bit ASCII codes seemed a good reason to go for 8 bit peripherals, at least. It was also an effective way to manage in-memory text. Also banks needed to do integer arithmetic and a trillion dollars is 42 bits even without cents etc. So lots of conflicting requirements even before the ability to access shitloads of by then cheap RAM came along Designing a CPU in TTL was not a trivial task...back in the 1960s -- The biggest threat to humanity comes from socialism, which has utterly diverted our attention away from what really matters to our existential survival, to indulging in navel gazing and faux moral investigations into what the world ought to be, whilst we fail utterly to deal with what it actually is.

IBM was, to a degree still is, a big and influential player. Lots of 360/370 systems were sold - and you saw 'em at big govt / NASA installations, which amounted to 'prestige' and a sort of a 'standard'. They were good boxes. Came across a 360 (model 20 ? the little one) in use by a parts distributor about 20 years ago. Nowadays they're always emulated, like with the Hercules system or better since I doubt you'll get parts/service for yer ancient 360/370 now. Bytes were bound to migrate towards some even power of two. Six or seven bits ... nah. 8 was kind of the useful minimum. 4 bits was for microcontrollers and some BCD calx. 12 and 18 bits were seen in various minis/mainframes for quite awhile. Hexadecimal is handy and fairly comprehensible. Better than octal IMHO. 8/16/32/64 works out very well with hex. I also think the die-fabricating tech when the first microprocessors came out made 8-bit the widest thing they could support easily on the typical amount of silicon real-estate.

WAS the cheapest system ... but cheap/good. The model 30 was similar - but did do the whole instruction set. Don't remember if the one I saw was a 20 or 30 ... but it was still hummin' along and doing practical work. The corp likely got it 2nd-hand and found somebody who knew how to make it do its stuff. So, not a total surprise to see one still in use so much later on. Never be quick to throw away something that WORKS. Probably all COBOL :-)

The inventor of the Schick razor would basically give away the razor body - knowing he would make it back many times over selling the razor BLADES. Today, you can buy a good color laser printer pretty damned cheap - but they NAIL you on the toner cartridges, and strive to make them hard to copy. Again, their money back many times over. IBM - kinda discounted boxes, but years and years of SUPPORT/MAINT. It's a viable, historical, biz model.

It became popular to trash Big Blue - kinda like 'BIG oil' or 'BIG pharma'. Truth is that they made damned good stuff - and because of that set MANY standards used to this day. You can still buy IBM mainframes ... the 'Z' series ... up to 4 linked BIG black boxes. RHEL-derived Linux is a popular OS option. Global-scale biz/govt buy 'em. A modern rendition of a 360/370 - same instruction set, peripheral scope, would still be a good general-purpose computer even on a PI/ARM power board. You're just being silly.
The word size in the PDP-5/PDP-8 is 12 bits. There's no need for scare quotes
around the word "word". The addressable memory unit in that architecture is
the word, so 4096KW is 49,152 bits, with addresses 0 to 4095 (most often
expressed in octal as 0 to 7777).
