I was late to discovering C. In the 1970's I lived in Denmark, and our
terminals, printers, keyboards etc were using a national version of the
ISO standard interchange code that Americans kn ow as ASCII.
Since Danish have three unique (well sort-of shared with Swedish and
Norvegian) vowels at the end of the alphabet (æ ø å / Æ Ø Å), these were
allocated at the end of the alphabet - after z / Z. When you look at the
ASCII character table, you will see that each of these conflicts with
significant symbols of the C language ({ \ } / [ | ]). This created a
strong disincentive to experiment with a "fringe" programming language.
It really was not until I got to California that it became easy to write
C. And by then, I was working on VMS and Unix (V7 on a pdp11/70, soon
replaced by 4.2BSD on a VAX-11/750).
Back when ACC stood for Associated Computer Consultants, I became
lars@acc - which then became lars@acc.arpa, even though we landed on the
MILNET side of the divide.

ISO-646?
In my journey with computers, I think I've only used the 8-bit encodings
that were supersets of ASCII, although I did have the opportunity to see
ISO-646-FI in action in a terminal once. It was interesting, trying to
get some software to produce a more readable/usable interface or convert
the content (If I understood correctly, irssi seemed to have lost some
of the handling for ISO-646 by then? I may have not checked thoroughly,
though.).

Don't feel bad. I always forget what the Apple II lacked, maybe the tilde,
but even with a Z-80 SoftCard you had to do some tweaks to write C code.

Curly braces. I had a friend who said 'you cant program in C on an Apple
because there are no curly braces'.
I think I sent him a header file with
#define BEGIN {
#define END }
In it.

Thanks. That make more sense that a missing tilde. It's a useful operator
but not something you use every day.

As of C99, there is a standard C header file called iso646.h. Its contents
look like
#define and &&
#define and_eq &=
#define bitand &
#define bitor |
#define compl ~
#define not !
#define not_eq !=
#define or ||
#define or_eq |=
#define xor ^
#define xor_eq ^=
Too late for your Apple-using friend, of course ...

Back in the early days of C standardization ('89), trigraphs were supported
to handle characters missing from the compiler character set.
Specifically to handle the braces (??< and ??>).

That friend said that around 1983. About the Apple II (released 1978)
The Apple II had no | or \ or { or } or even [ or ] on the keycaps. Nor
_ or ~
These were added for the Apple III. I have no idea whether they were in
fact able to display them or to enter them via some obscure sequence of
keystrokes, but it wasn't a simple process.
The easy way would be to use a generate a macro file like
printf("#define BEGIN %c\n", 123 );
...and so on to bootstrap being able to write the code using what
keyboard input you had.
Looking back, it seems unlikely that any programming language apart from
BASIC or ASSEMBLER would be possible.
There were compilers for 6502s but the rather large runtime libraries
made them a poor choice for small memory machines. BASIC was in ROM and
ASSEMBLER only used what you wanted it to use
Personally I thought the Apple II was a rich boy's toy.
Come to think of it, that sums up nearly every apple product..

ASCII codes 32-95 were all printable on the II and II+, which would include
[\]^_. It used the 2513 character-generator ROM:
http://www.thealmightyguru.com/Wiki/index.php?title=Signetics_2513
Codes 96-127 wrap back around to 32-63, so "{|}" would show up as ";<=".
(Behavior was verified with the online emulator at
https://www.scullinsteel.com/apple2/.)
>These were added for the Apple III.
They also made it into the IIe and later models, along with lowercase and
80-column text (with the IIe needing at least 1K in the auxiliary slot to
enable it).

Well yes. But you get around that by writing powerful well documented C
libraries, so that complex operations become a simple function call.

Assembler served me well. When I went with the company that wanted a faster BASIC they handed me a stack of greenbar with the disassembly of what they were using. "Smells like a Trash-80 ROM" I thought to myself. Disassembled code isn't that great but once you get the feel for it you can figure out what's going on. It's actually much easier than making sense of f2c output.

Once in high school -- armed with a copy of _Beneath Apple DOS_ -- I patched the Corvus-enhanced DOS 3.3 to disallow changing volumes with the "CATALOG" command. (Previously, someone could type something like "CATALOG V43", and end up in a different student's volume.) I used BASIC and assembler on 80186 processors in the Coast Guard, which were Convergent Technologies CTOS machines, later "BTOS" when Burroughs bought them. Didn't learn C until I went back to school, starting on my own with Microsoft's _Learn C Now_ -- it would let you write and execute programs, but you couldn't save the compiled executables. Then I dove into Unix (HPUX), downloaded Linux, built a student-access Unix host with gcc -- oh, I knew enough to be dangerous. But we managed to navigate the troubled waters of the early 1990's Internet, and managed to build useful systems with sh, C, awk, and perl. Technology transfer: my business partner and I took what we learned setting up and running the student-access Linux host, and built a dialup shell provider. We became an ISP, which has now been a CLEC for many years. But in these days of proportional fonts and typeset-quality output, your output field width will be measured in some actual distance unit (e.g. mm or points), not some number of characters.

This gives you some leeway to squeeze in a little bit more text, rather than forcing hard truncation.
