If all you want to do is copy/clone the old drives to the new ones, the
specs of the machine you're doing it on won't matter.  However, if you
intend to install the OS, etc., then it will make a big difference.

If I understand and a desktop set up is already installed/running on the
server, you just need to install the appropriate remote desktop
software on both systems.

Do you have physical access to the server?  I'm assuming you do.
