I don’t know Mint but apparently it’s a Debian derivative of some sort.
I’ve moved Debian installs between machines in this sort of way a number
of times and it basically well.

(My usual approach to running out of disk, though, is just to copy the
existing install onto a new disk and re-run grub.)

It may have bound network interface names to specific MAC addresses in
/etc/udev/rules.d/70-persistent-net.rules.  If so you can delete this
file.

There might be some pratting about with Xorg configuration involved.

Probably something involving VNC.

I use RDP (which at times leads to the amusing combination of running a
Microsoft-supplied application, on a Mac, to access a Linux system) but
this requires some messing around to get keyboard mappings right, so
this may not qualify as ‘simplest’.
