I thought you were running Mint.  No matter.  Have you considered just
doing an in situ (on the server) distribution upgrade? 
Lenny->Wheezy->Jessie, and once done, transferring the system to the
new hard drives by whatever method is appropriate?

If you do, please, please read the instructions and Release Notes for
each distro.  And don't skip a release, otherwise, you'll have a good
chance of breaking your system.

FYI:  Stretch, the current Debian Testing, is due to be the new Stable
possibly this year.  At that point support for Wheezy will cease. 
Support for Jessie will continue until the new Stable after
Stretch is released.

Disregard my above advice.  I misunderstood what you wanted to do. 
After reading the rest of the this thread, you want to use X GUI apps on
system to administer your server.  Right?  This is possible.  There
are apps already "out there"  that do this, and the server doesn't
need to run X or any GUI. I can't make any recommendations. Never used
such apps. And it's been years since I even read about them..

Why Mint?  Debian has the reputation of being "the" server distro due to
its philosophy of Stableness First.  And you already have it installed. 
Just distribution upgrade to the latest version.  Will save a lot of
time and headaches.
