I encode all of my movies as MPEG-4 containers with H.264 encoding -
they multiple subtitle/CC tracks. There's absolutely no requirement to
use MOV containers with iTunes. 

I couldn't care less about MKV. If you do, iTunes clearly isn't for you.
BTW, nobody here is suggesting ever person on the planet should use
iTunes.

Meh. Much better to have the movie and meta data self-contained within
one single file, IMO. Much easier to manage that way.

Yeah, see I never bought into Windows for media since it's always lagged
behind Mac OS; so I don't have any silly AVI and MWV files to deal with.

You keep mentioning MOV as if it's the only thing iTunes supports. You
couldn't be more wrong.
