You're talking about the TCP push (PSH) flag, right? I believe the Uthernet
II always sets this control bit in the TCP header. As far as I know, there's
no way to set it when using the built-in TCP stack. Also no way to set the
URGent pointer either, but that mechanism is practically deprecated.

I can double-check for sure with Wireshark this evening.
