Ease of programming, primarily.  For a product made in quantity with
custom PCB's, sure.  But I think we're talking about one-off stuff using
interactice Forth on little evaluation boards like the Stellaris
Launchpad.  So you've got:

 a) Cortex M0 boards starting around 7 bucks and using almost no power;
 b) Stellaris Launchpad which was around $13 last time I looked, using
    tens(?) of mA;
 c) Raspberry Pi model A at $25, etc.  using 100's of mA.

The cost of these things is insignificant compared to the tiniest amount
of development work.  10's vs 100's of mA of power may be an issue
sometimes.  I think usually though, if I can get 50mA to something, I
can get 500mA or whatever to it.  If I can't, i.e. I want to run
something for long periods on a battery, I want it to use microamps
rather than milliamps.  I'd like to know how much power the Stellaris
Launchpad actually uses.
