  As usual, you don't pay attention to the context.

  The OP doesn't want Google spying on him, so - unless he's stupid - he
is not going to use Google products, apps (such as the (Google) Maps
example), services, etc..

  So the *real* context is an Android tablet without a Google account or
with a fake Google account (for using the Play Store). I recommend(ed)
the former.

  So the *only* Google stuff is Android (without any Google apps) and
*perhaps* a *fake* Google account and the Play Store.

  With/in *that* context, Google can get no personal information about
the user.
