Good news! I uninstalled both the JDK and JRE - as per this suggestion - 
and reinstalled.
That's all it took: my Mars.2 Eclipse is now working normally again!

I did *not* have to mess with environment variables at all. My copy of 
Eclipse Oxygen also seems to launch normally.

I'm not sure *why* this worked but I'm so grateful to be back up and 
running I don't care that much at this moment. I just want to get back 
to writing code. :-)
