I have several I perform on a regular basis:

video transcodes;

compression of data files (jpegxl, if one turns up the compression 
efforts, will saturate the CPU at 100% (or 8x100% for the points where 
it parallizes the compression run)

xz, bzip2, gzip, lrzip can also peg the CPU at 100% with enough input 
data to take a measurable time to compress.

GIMP, for some of the more complex manipulations can also hit 100% for 
short periods.

Rawtherapee will also hit 100% for brief periods once one starts turn 
on noise filtering algorithms and esp. if one cranks up the 
aggressiveness of said algorithms.

Others I'm likely forgetting right now.

But besides the 'video' and 'general compression' tasks, most of the 
rest of these are "100% for 10-20 seconds" rather than "100% for the 
next ten minutes or ten hours".
