Nothing is missing. 500 GB is 500000000000 bytes. Divide that by 1024*1024*1024 and you get the figure in GiB. Disk manufacturers use gigabyte units (GB) as powers of 10, since ever. A lot of software use GB, referring to powers of 2, not of 10. This is confusing, so the current standard is to rename as GiB. I'm not familiar with mint, so I can't comment on why it did that. I don't know if that is the default or not, optional or not.
