on which desktop? the mac? what you do on an ipad won't make a
difference on the mac.

the sim is included for the carrier associated with the ipad.

all ipads are unlocked and ipad cellular plans are non-contract, pay as
you go, so you can change at any time, for any reason. all you need is
a new sim from a different carrier. they're usually free, but some
stores will try to sell them to you.
