Again, I'm not sure if it still works in newer MacOS versions, but try 
holding down the Command key while double-clicking a folder in the 
Finder and it will open in a new window leaving the original window 
also still open. (You may need to first turn off the Finder > 
Preferences > General option for opening folders in tabs).

Depends what you mean by "more control"

TinkerTool / TinkerTool System and OnyX both let you change some of the 
'hidden' Finder preferences without going through the Terminal.

There are numerous other little apps and preference panes that give 
extra features to MacOS.
