Unlikely that you need both GlassFish and Tomcat.

Maven is a great tool.

But I am not sure I will recommend starting with it. Too much happening
under the hood.,

Code should work with version >= minimum version.

Yes - there are usually several ways of doing the same.

Try them all and decide what you prefer.

JAX-RS

JPA API with Hibernate as implementation is a very mainstream
choice.

The tutorial is for Java EE 6 not for Java SE 6.
