They don't expect everyone to be able to run current software for various reasons, so from Java to Windows you can pay for support past the "end of life".

If you can run the latest, everyone should remain current on Java.
Windows is a different story.  I run 8.1 at work, 10 at home.  I've heard 10 has a lot of issues on a managed domain.  We still run XP because software would cost thousands of dollars to run on anything newer.
