In all your mail accounts (Mail|Preferences|Advanced), uncheck the box:
	Automatically detect and maintain account settings.
Unfortunately this feature of Apple's is buggy.

With GMail (and some care) I find IMAP works very nicely.  You have to 
make sure certain settings on the gmail website IMAP settings are 
correct to work well with Apple Mail.

eg: 	Auto-expunge: OFF

Patience and try, try, try again...

Make sure the Port (IMAP) is 993 with "Use SSL" checked.  (Password 
authentication selected).

It should prefer IMAP

Note that yesterday afternoon GMail was not working well (you could 
"fetch" but not send e-mails).

Yep.  I have two such (IMAP) accounts.
