Simply visiting the NYT website (or Google, nor *any* other website)
doesn't give them any personal details, unless you actually login to an
account, in which case you already gave them your details. Websites
cannot get your personal details from cookies.

If you set-up and account, then, whether you not you bothered to read
it all, you agreed to the terms and conditions, including their privacy
policy. The simple answer is usually to just make sure you logout of
the account.
