I think that this depends on how you like to work. If I am going to send an email to a lot of folks (20+), it is not likely that I am going to remember everyone, to allow me to start typing their names into the recipient field. That's why I like to go down the Contacts directory and just click on people as I see them. If there are only a half dozen or so, and they are in my front of mind, then typing their names into the field is fine. But, for a large number, using the Contacts list works best for me. That's why I was so annoyed that Apple pulled this function. I like being given the option of deciding how I am going to work. I don't like some guy in Cupertino deciding for me.
