On the other hand, there is no real downside in letting it go a bit
longer than that, just a minor increased risk of infection which isnt
going to happen if you have the drew properly airlocked etc.

You also see the brew settle better too, so you don't get so
much sediment in the bottles and don't have to double fill
the bottles because there is too much dissolved CO2 in the
beer so you get too much head in the bottle when you
bottle it.

Mine goes into the database along with the temperature
because that makes a difference to the SG if it changes
much from one day to the next.
