Of course it has. Apple server uses postfix and dovecot. It might even
have sieve installed by default.

No, that's no the case *at all*. That is how POP works. IMAP works by
having the client SYNC all its local folders with the folders on the
server.

You are not describing IMAP at all.

There is no sense in filtering twice in two places. Filtering on the
server means that mail is always where it is supposed to be.

No, that's not the case at all. Anyone with dovecot and sieve or courier
and maildrop or anything and procmail can do server-side filtering.
