Servers are doing almost nothing running bascially one "app" (the server) - they sit there waiting for a file request, and then send that file. On the other hand a desktop / laptop computer is doing *everything* and running multiple apps ... at least until the computer industry moves back to dumb terminals running everything in the 'cloud'. Web browsers are often especially bad at having memory leaks. Problems are also often caused by people simply not quitting apps they have finished using, so they end up with lots of apps all using up "memory" (real or virtual).
