The "out of the box" behaviour of various packages leaves a lot to be desired, particularly with regard to so called "smart quotes" and emdash. Those are just the examples which caused me grief. I am sure there are other examples. My examples: 1) Web sites which contain snippets of code, where double quotes and/or single quotes are automatically converted to "smart quotes" by the publishing process. The results are not valid code and are a real pain in the neck if you want to copy and paste them to prove them out. 2) I haven't looked at OpenOffice since LibreOffice came out, but OpenOffice would silently apply spelling autocorrections to spreadsheet data.
