Do you not need auditibility of the hardware for that as well?  Is the
VM2 auditible, including the chips?  Do the boards use safety certified
chips (I didn't see a mention of that)?  I notice one of the TI
Launchpads uses a chip specifically designated as being made for safety
applications (I doubt the Launchpad board itself is certified for that
though).  The chip has something like dual ARM cores operating in
lockstep with ECC on all data paths, and differential fault detection in
the hardware.

I'm not convinced that it's easy to do in Forth either, if the software
has much complexity.  Look at the OpenSSL Heartbleed bug, for example.
Do you think that would have been more easily detected in Forth?  It
wasn't a terribly deep or devious bug, but a good programmer made it and
another good programmer familiar with the codebase missed it on review.

The strength of Forth seems rest to partly in a philosophy of keeping
the code very simple.  There are some applications that can't help being
complex, and Forth tends to not be used in them.
