When a neutrino interacts with a neutron, for example, an electron is emitted. The neutrino carries a lepton number of 1 and an electron also has a lepton number of 1. If the neutrino were "employed" rather than destroyed, you'd have an initial state of lepton number 1 and a final state with lepton number 2.
