I haven't seen any indication that color was removed because Apple "assumed nobody was using it". More likely they realized color wasn't crucial to finding things in the sidebar, and removing color gave a more uniform appearance which many users would appreciate (I certainly do). And again, since the icon shapes and item names haven't changed, it's just not the big deal you are making of it.
