I've got dozens of recurring reminders set with no issues.  When one 
goes green, just hit the tick box.  I don't find it 'easy' to disable 
any by mistake.  You'd have to hit the (i) and also untick a box.  Just 
as easy to delete an event in Calendar and confirm it by inattention.

In Reminders I have it set so they're sorted by "due date" so the one 
just ticked falls to the appropriate position in the list.

Next item floats to the top (a "pre reminder" of sorts).

It's really more natural for punctual events, IMO.
