Don't know about predominately, but I do know a few non-profits that run 
Linux around here.  Some exclusively.  You might not make as much there 
as you would at a for profit corp, but maybe you can write off part of 
the work as "charitable donation of time"?  (Check with your 
accountant...  IANABC (I Am Not A Bean Counter))

Other things to consider would be finding any small business with a MS 
support contract and/or site license (or whatever it is called).  If the 
contract is due soon (for varying values of "soon"), you might be able to 
talk them out of paying the ransom and pay you instead.  If they aren't 
so deep into MS-land they can't be removed easily...

BTW, what part of the world are you in?
