Starting from the end, my IMAP is FastMail (FM); Gmail is just a POP
account, so I can keep an eye on the Google account I need to use
Android easily.

Thanks for showing how to access IMAP account subscriptions; as I many
times do, I unconsciously thought all settings HAD to be in the
drop-down menu "Settings" (I even resented the RH pane a little, for
"cluttering up the email window unnecessarily", or something like that).

Unfortunately, the "Manage Folder Subscriptions" just confirmed what I
had suspected in the 'Synchronization' "keep on this computer' options,
as I had already mentioned: I already was/am subscribed to all the
folders I wanted (and unsubscribed from those I don't want) -- and,
especially, to the "Trash" folder.

So, since the name of this folder, as far as I can see, IS
"INBOX/Trash", exactly as I had entered it, it seems the "Move it to
this folder" SHOULD be working -- and it seems strange it would, on a
restart, be substituted by just "Trash" in the "about:config"
Preferences. I just tested it, and it happened again, but this time the
"Server Settings" 'Move to folder' did not disappear, while moving a
message from Inbox to anywhere else did not place a copy in the INBOX
Trash folder (but deleting a message did).

I still suspect something is 'damaged' in the profile, but don't have
the knowledge or disposition to try and track it down, and also don't
want to try anything which would involve migrating all my decades-old
emails (from Netscape, Moz Suite and SM), and risk creating even worse
problems.

"If it ain't broke don't fix it", and in this case it seems to be
damaged, but not broken, so...
