Folder subscription can be invoked in various ways, eg:
* select the account in the LH pane and choose Manage Folder
Subscriptions from the RH pane, under Advanced Features
* from the context (right-button) menu of the account, select Subscribe...

I confirm that in the Server Settings page the selected folder for "When
I delete a message: Move it to this folder ..." does not persist when
the page is re-opened, but deleted messages still go to the selected
folder. Your desired/selected Trash folder should appear in the
pull-down for the setting among other subscribed folders.

Finally, if your IMAP server is GMail, the folders shown through IMAP
don't actually exist in the server, where all your messages are in a
single store for easy mining and IMAP folders are implemented as message
labels. Thus it's possible for the same message to be in several
folders. If the server should fail to clear other labels when adding the
Trash label to a message, the message might still be shown in the folder
from which it was supposed to be deleted.
