I've done the same thing (personal theme).  I wanted so much changed it was easier (for me) to pick a theme that was 
really close and make changes.  Mostly colors, a few margins etc in the gtk3 and gtk2, and I did change cinnamon and 
make it appear better too.

However I never did anything about the width, and I do like the above change but it has it's faults.  If the applet is 
changed, and changed radically for some other updates, then your version you have in .local/share is out of date and may 
be faulty now.

I just like changing the cinnamon.css.  ".menu, .popup-menu, .popup-combo-menu" does have a width setting.   Mine is set 
for 800px.
