The only way I can see for you to have music in iOS that is NOT in
iTunes is for you to

1) sync music from iTunes to iOS device.
2) Delete the music from iTunes.

Since the only way to sync music to iOS is from the iTMS (which you can
restore at any time) or from iTunes, you really have to go out of your
way to not have it already.

And I'm not sure THAT even works, since before a backup, iTunes syncs.
