Per quello che vuoi fare IMHO ti conviene una VPS e ci installi le 
versioni che vuoi. Noi per esempio abbiamo ancora parecchie Debian Jessie 
in giro proprio per quel motivo, e con i repo di https://deb.sury.org/ 
[1] ti installi il php 5.6, 7.0, 7.1 e 7.2. Credo arriverà anche il 7.3.

Abbiamo schedulato l'upgrade per quando terminerà il supporto LTS [2], 
anche se temo il bagno di sangue :D

La vps la metteri da un provider, così ti togli le varie rogne di 
connettività, banda, firewall, dmz, eccetera
