Well, normally you wouldn't see a/the keyboard app, unless you were specifically looking, under (Settings -> PERSONAL ->) 'Language & input' or/and (Settings -> APPS -> Manage apps ->) 'ALL' tab. Unless your phone is totally weird, you shouldn't be able to 'delete' (Uninstall) your keyboard app(s). You can Uninstall keyboard app *updates* - if any - or/and Disable keyboard app(s), but you shouldn't be able to completely Uninstall/'delete' them. For example my old phone has two keyboard apps, 'Huawei Input Method' and 'Google Keyboard'. I installed 'Google Keyboard' from the Play Store and hence it *can* be completely Uninstall-ed/'deleted'.
