Well, I think you're missing the point of the minus or plus signs. Let's take a frame S with x, y, and z axes. Now we will stick a post in the ground at x=15, y=0, and z=0, where all those distances are in feet. Now we will suppose that there is another frame S', such that the origin of S' moves relative to the origin of S at 5 ft/sec in the positive x direction and such that at t=0, those two origins coincide. Now you might ask what is the coordinate of that post in S'? Well, at t=0, it is at x' = 15 ft, y'=0 and z'=0, according to the Galilean transformations. At t=1 second, however, it is no longer at those coordinates. It is at x'=10 ft, y'=0, and z'=0. But what if S' had the same speed relative to S but in the opposite direction. Why then, at t=1 second, the coordinates in S' would have been x'=20 ft, y'=0, and z'=0. Notice that there is no positive or negative time; in both cases, the time is positive, but the answer comes out much differently. That's why specifying v as a vector is important.
