I know it's easily doable, but links would be appreciated.

It's easy (for them). All they have to do is draw a tiny pointer 
on the tablet screen and manipulate it with data that is already 
available. A tap occurs at the pointer location, not at the tap 
location. I can do that on a PC with a hook. Pointer movement 
occurs when the fingertip drags on the screen, relative to the 
begin point. I'm not even a (real) programmer and I do that stuff 
on a PC. 

There are some useful things that they would need to do that I 
don't do, like with pointer acceleration. The type of settings you 
see in mouse and touchpad properties. But I'm sure they can do 
that easily. 

Something I would look for in an Apple video is how grainy the 
pointer looks. They can probably make it look good, but maybe they
don't. 

The other part would be toggling a keyboard in place of the 
touchpad (that would not show on the big screen), but I'm sure 
they can also do that easily.
