Whether Emacs starts with a GUI depends on how you installed it and
how you started it. It's a "I am using this exact operating system and
I installed Emacs in this exact way" kind of question.

Just go through the tutorial though and you'll do fine. You may not
*appreciate* it right away but you'll be able to use it. The tutorial
is the first option under the 'Help' menu, you're prompted to enter it
on the splash screen that appears by default (even in a terminal) and
you can get to it with C-h T (hold ctrl, press h, release both, hold
shift, press t).

I use vim rather than Emacs for Forth, as forth-mode's opinions about
code formatting diverge too much from mine. vim also comes with a
tutorial, probably accessible with the 'vimtutor' command. vim also
has a GUI that you can install and use, and it's worth trying for some
of the color schemes (which Emacs also has, although it may take you
longer to find them.)

Whatever you use, take a look at http://orgmode.org/ . I'll have an
org-mode buffer open all day in Emacs at work, even when all my coding
that day is with vim.
