well that's just dumb. no wonder you have so much trouble. 

you're using itunes in a way it was not designed to be used. why even
bother using it if you have turned off syncing *and* music management?

what idiosyncrasies?

click sync (if it doesn't happen automatically) and a backup is
included. click restore and everything is restored. 

every time i do a restore, i get all of my data, including music. it
'just works'

you are trying to make it far more complicated than it needs to be. 

you're running into all sorts of problems because you're using itunes
in ways it was not really intended.

how is it random??

data from all apps is backed up unless the app says something is not
important, such as with caches or other temporary files. 

not all data needs to be backed up, and that decision is up to the app
developer for a given app, not itunes. 

for example, on a desktop computer, virtual memory swap files are not
backed up because there's no point in that. often, an app will put
temporary files in /tmp, which is also not backed up. not everything
needs to be backed up for a backup to be considered complete.

i'm describing the user experience, as a typical user would see.

the user plugs in ios device, clicks restore, and everything is
restored from their backup. 

all they care about and all that matters is will their new device
contain the stuff from their old device, and it will.
