Usually you take the Mac, but that's a pain in the backside with a 27"
iMac.

Some may be willing to sell you a USB stick with the installer on it,
or perhaps copy the installer onto your own USB stick.

It isn't just Apple. All software sales are going to be going in that
direction. It's rather ridiculous since not everyone has an internet
connection, and many who do have one that is slow or data-capped.  :-(

Even worse, it's likely that the next step (a giant leap backwards)
will then be to have a "computer" that is really just a dumb terminal
which sends and receives information via the internet from applications
(rented by the hour) running on a central server. There's already some
software that works that way.

Not only does Apple not sell DVD installers for the current or previous
OS, they no longer ship any installer DVD in the box with new Macs
either. The computers now have a silly small "Restore" partition on the
hard drive which then downloads the full OS from Apple's servers to
install.  :-(
