Preview and Adobe Reader will have different ways of displaying the PDF, as will every other PDF viewer there is. Early versions of Preview were hopeless for viewing CMYK print quality PDFs ad would disply horrible colour shifts. Technically since PDF is a Adobe format, Adobe Reader should be the best application to use that properly displays everything using the correct standards ... unfortunately there are also many different ways to create a PDF, and lots of them do things in non-standard ways.
