They didn't - they renamed it, as anyone who just looks can see: <http://jollyroger.kicks-ass.org/finder/desktop_sort_by.png> You can also see the "Show View Options" menu command in that very same menu, which leads to this window, offering plenty of options for arranging items on the desktop: <http://jollyroger.kicks-ass.org/finder/desktop_view_options.png> As you can see, it's anything but rocket science.
