  If you disabled it, you should be able to find it at the bottom of the
'ALL' tab of 'Manage apps'.

  This is how things work on my old Android 4.1.1 phone (Huawei Ascend
Y300) (Note that different brands, models and Android versions, can
/will have different UIs:

-> Settings -> 'All' Tab -> APPS -> Manage apps -> swipe to 'ALL' tab.

  This list of apps is sorted alphabetically, BUT any disabled apps are
listed at the end - again sorted alphabetically - and labeled with
'Disable'.

  If you find the right app, you can tap it and 'Enable' it again.

  General note:
  
  Note that apps can have weird/long/'reverse' names, starting with
'com.'. For example 'com.google.android.voicesearch'. These names are
often too long to be visible in normal portrait mode, so you'll need to
enable Auto-Rotate and turn the phone to landscape mode.

  Good luck with your quest.

P.S. I thought my phone had a non-Google keyboard, so I could give you
its name, but I apparently was confused with my newer phone. That newer
phone indeed uses 'Android Keyboard (AOSP)' (the name under 'Language &
input' *and* the name of the app in 'Manage apps').

On mine: Settings -> Apps -> ALL.

Same here. At the bottom are
        YouTube
        Facebook                Disabled
        ForeignOnLineApplicationDisabled
        Gmail                   Not installed
        Skype                   Disabled
        Twitter                 Disabled

No sign of a keyboard "app". I don't remember _ever_ seeing a keyboard
app., even when I had a keyboard.

  Well, normally you wouldn't see a/the keyboard app, unless you were
specifically looking, under (Settings -> PERSONAL ->) 'Language & input'
or/and (Settings -> APPS -> Manage apps ->) 'ALL' tab.

  Unless your phone is totally weird, you shouldn't be able to 'delete'
(Uninstall) your keyboard app(s). You can Uninstall keyboard app
*updates* - if any - or/and Disable keyboard app(s), but you shouldn't
be able to completely Uninstall/'delete' them.

  For example my old phone has two keyboard apps, 'Huawei Input Method'
and 'Google Keyboard'. I installed 'Google Keyboard' from the Play Store
and hence it *can* be completely Uninstall-ed/'deleted'. But the 'Huawei
Input Method' came with the phone and hence sits in the firmware and can
only be Disable-d.

I go: Settings. PERSONAL. Language & input. KEYBOARD & INPUT METHODS. 
And all that's there are Google voice typing, and the SwiftKey Keyboard 
I put there the other day. Or under Apps ALL, I _think_ the only one 
with keyboard (there are 140-odd, many with the Android icon) is the 
SwiftKey.

I have no apps beginning DooGee - only 5 D ones altogether; I don't 
think I have _any_ with DooGee in the name.

The ones I have beginning .com are: .com.android.backupconfirm...; 
.com.android.provision; .com.android.sharedstorage...; 
.com.android.wallpaper.hold...; .com.mediatek; three .com.mediatek.theme 
ones; and .com.wlan.wland . None are in the "Disabled" bit at the 
bottom. (None I remember installing, so I presume they're part of the 
OS.)

FWIW, I have fired up my old, equally cheap, "Timmy" phone running 
Android 4.2.2.
  Under Running apps, Android Keyboard (AOSP) 1 process and 1 service 6.7 
MB is listed
Under All, Android keyboard (AOSP)  1.8MB is listed.

  Not sure why the sizes appear to be different.

I have ten under RUNNING: Settings, WiFi Buddy, Google Play services, 
Google Play services (yes, twice - different details), Weather, Music, 
NULL, Android Service Upda..., HiChat, and SwiftKey Keyboard (44MB 1 
process and 2 services). Under ALL, SwiftKey Keyboard is 54.88MB. The 
only ones I have that start with Android are Android Live Wallpaper, 
Android Service Update, and Android System.

I've fired up an Android 4.4.2  7" tablet and looked into "Settings".

Under Keyboards I have Android Keyboard (AOSP) greyed out  and Hacker's 
Keyboard. Hackers is set as the default.

Under Running Apps there is just Hacker's Keyboard.
Under All Apps -  Android Keyboard (AOSP) 80kB and Hacker's Keyboard 1.8 
MB.

Android Keyboard has a Disable button, where most other apps have an 
Uninstall button, so it looks as though it shouldn't be possible to 
remove it

I tried making Android Keyboard the default and that worked.

So that has shone no light into this at all.

I finally got round to trying, but when I go to the store and put type 
aosp, then select aosp keyboard from the drop-down list that appears 
(I'm on my PC at the moment), I see _lots_ of keyboards; any idea which 
is your 80kB one? (And what AOSP means?)

scratch some itch they feel with the standard keyboard ... just try a 
few, see what you like, the size of the APK is given in the additional 
information at the bottom.

it is not a seperately installable (pseudo) app.

  Searching the Google Play website, looking at app-icons [1] and
following links, I think this is the closest installable equivalent:

  I have 'Android Keyboard (AOSP)' only on my 5.1.1 smartphone, i.e.
newer than your 4.4.2 tablet, and it's 'Version:' also says
5.1.1-C622B020. Under 'Running app' it's even some 7.2MB. Under 'ALL'
it's 1.48MB (Total).

  So, as they say, YMMV c.q. YMWV.

The smallest one I found was one with "big" in its name - big keys or 
something - which was 6xx k; however, that was only trying a few at 
random, as you can only see the sizes when you go into them, and there 
must be a hundred of them! (The above two say "device dependent".)

Hmm. Wants access to: Identity; Contacts; Photos/Media/Files; Wi-Fi; 
download files; read sync statistics. All this just for a _keyboard_? 
Anyway, I've tried: the PC now says it's installed (I figured I could 
always uninstall it). But on the 'phone, it isn't showing, either under

In later Android versions you can turn off app permissions you think
unnecessary. Sometimes the app will complain or not work. But in my
experience most of the time the app keeps working just fine. YMMV of
course...

You use your keyboard to enter characters into all these apps/entities 
and more.  If it doesn't have access, how is it supposed to do that?

All the permissions are off in my Gboard keyboard and it still seems to
work just fine. The permissions are apparently for the real scary stuff:
