Android is a complex Linux system. Every app runs as a separate user and
these permission models are what are needed to allow apps to share data.

You might want to store email addresses with contacts to use your
contact program to initiate email messages. I don't do that, but some
people will. Calendar permissions are presumably needed for inviting
people to events. If you have email addresses for people, and add them
to events, then automatic email invites can be sent, and when they reply
the ical attachements can be routed to the calendar to update RSVP
status. This is SOP for corporate calendars but might be overkill for
individuals.

I use the "Simple Mobile Tools" Calendar and Contacts myself, because I
think that those will have less Google in them.

My Calendar has no permissions granted, and my Contacts has only "phone"
and "contacts" permissions.
