I downloaded Slackware64-Live-Current.iso and used iso2usb to make a
bootable USB stick (~6.2 GB). When I boot into it slackware-version
tells me it's 15.0 vs slackware current. WTF?

That's correct, the nightly build script does not change 15.0 to say
"current" or even "16.0a0"
The built packages say current because of ${RELEASE:-"current"}, as per
usual practise the actual number "15.0" doesnt change until Pat decides
its a beta.

You don't need to use iso2usb with those: the file is a hybrid. You can
just splatter it at a USB stick with "dd". Make *very sure* you get the
target device correct.
dd if=/var/tmp/slackware64-current-install-dvd.iso of=/dev/sdb bs=512 status=progress
I just booted the Sept 9 dated one via Qemu and the grub menu says
Slackware 16.0 while the installer welcome message says version 15.1.
qemu-system-x86_64 -smbios type=0,uefi=on -m 2g -cpu max -M q35 -drive if=pflash,format=raw,unit=0,readonly=on,file=/usr/share/qemu/edk2-x86_64-code.fd -cdrom /var/tmp/slackware64-current-install-dvd.iso
