I just connected apple earbuds to my iPad mini 4 and my iPad Air 2.
Button resumes playback with screen off/locked no problem.

We updated all our phones last year, so we only have 7s, so I cannot
test the 6 or 6S.

Can't imagine what it would be. There's no setting for headphones that I
can remember in iOS.
