Hi Ken

First of all thanks for the extensive explanation.

If whit is Windows, check the 'print to file' box in the print dialog. 
If its Linux you'll probably have to mess about with CUPS and I don't 
know CUPS well enough to give you intructions. 

There is no dialog box, once you hit print in the POS system its goes straigh to the printer.

Seems that option 3 is the one with less hassle. So I will try that one, but I have not yet found anything similar...

Its odd that this its not a problem that someone has faced before, ESC/POS its a fairly common language for POS system and printing, nowadays there should be a way to convert to PDF because all of the digitalization and new regulations around.
