Documentation on APFS is still sparse, which makes sense as they are
still making chances to it.

However, looking at how a boot drive is setup on a volume, it seems
obvious that two different system installs are going to break since
there is ONE Recovery partition, and ONE VM partition and ONE PreBoot
partition.

You would necessarily have to have a new top-level APFS container in
order for this to work.

I'm sure they will not expose this in the GUI.

I would strongly recommend that you only have one macOS version per
physical drive.
