I have two Notes backup apps here
<http://toolsandtoys.net/note2txt-export-apple-notes/> and
<http://falcon.star-lord.me/exporter/>

They both ‘do the job’, but it’s a manual job... I rarely remember to use
them (I just did though, just for the heck of it - probably the first time
in several months.
