If you don't set a ServerName, how should Apache know for which requests
this VirtualHost is responsible?

My advice is always to use a specific CustomLog and ErrorLog for each
VirtualHost. Otherwise you cannot tell whether Apache actually uses the
VirtualHost that you want it to use.
