The "editor" typically maintains more information than it displays
(WYSIWYG). Otherwise, it can't let you pan, zoom, crop, uncrop, etc.
If you "manually" remove that information, then you force yourself
to manually "restore" it when you decide you want to show a
different part of the image or at a different scale, etc.
[I.e., this makes document preparation more tedious; like cutting letters
out of a newspaper and pasting them onto a ransom note instead of
selecting different typefaces for text TYPED on a keyboard]
And, just because you are "printing to a PDF", that doesn't mean the
"editor" isn't sending out ALL of this data as layers and relying on
the PDF encoding to make it look like you think it will look.
(watch a complex EPS get rendered and you'll see LOTS of detail
that is overlaid before the final image appears; you (an adversary)
can reveal ALL of that detail!)
I've used this to uncover lots of detail that "authors" thought
was "not present" in their documents (including examining EXIF
data in embedded photographs).
